INGREDIENTS
2 eggs
1fl. oz. (30 ml) heavy whipping cream
Salt and pepper to taste
1 teaspoon butter
Pinch of chilli flakes
Crisp lettuce leaves
1 ½ oz (45g) smoked salmon
½ tablespoon Italian herbs (optional)
INSTRUCTIONS
1. In a bowl, beat together eggs and heavy whipping cream until it smooth. Add salt and pepper to taste.
2. Melt the butter in a frying pan on medium heat. Pour in the egg mixture, stir continuously until eggs are cooked then remove it from the heat.
3. Lay the lettuce leaves on a plate. Spread the scrambled eggs onto the lettuce and sprinkle it with chili flakes. Then, arrange pieces of smokes salmon on the eggs and top with some Italian herbs.
4. Lastly, add a bit of sunshine and dig in!
